Another classic from the Ecotricity design team for this week’s Meat Free Monday meal suggestion. This time it’s a child friendly curry from Angus.
Interesting fact – sweet potatoes have huge amounts of Vitamin A and also Beta Carotene (slightly more than carrots!).
Enjoy!

This is a super simple curry recipe that’s also cheap and will feed the whole family. It’s nice and fragrant, but not too hot and it’s a big winner in our house as it’s my 18 month old’s favourite meal.

Ingredients
- 2 tbsp olive oil
- 1 Onion sliced
- 1 tsp Cumin
- 1 tsp Ground coriander
- 0.5 tsp Mustard seeds
- 0.5 tsp Chilli flakes
- 1 piece Fresh ginger peeled & finely chopped
- 2 Sweet Potatoes (large) cut into chunks
- 100 g Red lentils
- 400 g Plum tomatoes
- 165 ml Coconut milk
- 200 g Spinach washed
- 1 bunch Fresh coriander chopped
- 170 g Rice (or however much you need)
Servings:
Instructions
- Heat the oil in a large pan, add the onion and ginger and cook for a few mins until softened. Add the spices and cook for 1 min more, then stir in the lentils and sweet potatoes. Add the plum tomatoes and break them up a little, then pour over approx 200ml of water.
- Bring to the boil, cover and simmer for 20 mins until the lentils and sweet potatoes are tender and the sauce looks nice and thick.
- Whilst the curry is doing its thing, this is probably a good time to get your rice on the go. I recommend following instructions on the packet, although feel free to throw a few cardamom seeds in with your rice for an extra blast of flavour.
- Stir in the coconut milk and cook for a couple of minutes, then stir in the spinach and cook until wilted (frozen spinach works equally well).
- Add a little chopped coriander before serving up if you fancy, although it works well without it.
- Serve with rice (and poppadoms if you like!)

Looks delicious and remarkably easy – can’t wait to give it a go!
I see you have a windmill turbine in your page. Have you read and research widely about health issues in people and animals who live near them? I am pro nature and believe in reducing my carbon footprint but I try to be well research in my options and the consequences of my acts.
wtf is all this twaddle about wind turbines and animals – go and stand by a pylon if you don’t like them.
just made this curry – very easy, cheap and tasty – thanks, John
