This week we’ve got a Meat Free Monday recipe from another member of staff at Ecotricity – this time it’s from Pay as You Go Assistant Hannah.
I know what you are thinking – how can pear and sweet potato work together? But it just does…
Give it a go.
Ingredients
- 1 Onion chopped
- 1 Carrot chopped
- 2 Ripe pears chopped
- 3 Sweet Potatoes chopped
- 425 ml Vegetable stock
- 1 pinch Salt & Pepper to taste
- 0.5 tsp Dried thyme
- 1 pinch Paprika (or Cayenne if you prefer)
- 1 clove Garlic
- 1 swirl Coconut milk (optional)

- In a pan, heat margarine on medium heat. Add onion, carrot and garlic and sauté for 1 minute. Add sweet potatoes, pears and thyme and sauté for about 2 minutes. Add paprika and veggie broth. Bring to a boil and simmer for 15 minutes or until sweet potato is soft.
- Wait for soup to cool down a bit before you puree it, otherwise it will explode in the blender because of the heat.
- Puree in a blender or food processor until smooth. Return to pot. Add coconut milk if using. Simmer for 5 minutes. If soup is too thick add a little extra broth.
- Season with salt and pepper and serve to hungry guests.
